Well, I made the jump to all grain!

Last Monday I brewed a winter warmer, and today I am racking it into the secondary, where it will sit for about 2 weeks before I keg.

I have a bunch of bottling to do this weekend, wiith both a faux Octoberfest, and a winter warmer ready to rack.  soon after, I'll have to decide what to do next. . . .

That's awesome!

 I brewed 5 or so batches, before I decided to get into kegging. I still bottle a few of each, for gifts or whatever, but kegging is great!

 

What's your recipe for the winter warmer, if you don't mind me asking?

1.00 oz Goldings, East Kent [5.40 %] (60 min) Hops 12.1 IBU
1.00 oz Goldings, East Kent [5.40 %] (20 min) Hops 7.3 IBU

0.25 tsp Clove (Boil 5.0 min) Misc
0.25 tsp Ginger (Boil 5.0 min) Misc
0.50 tsp Allspice (Boil 5.0 min) Misc
0.50 tsp Nutmeg (Boil 5.0 min) Misc
1.00 tsp Cinnamon, Ground (Boil 5.0 min) Misc
1.00 tbsp Lemon Peel (Boil 5.0 min) Misc


2 Pkgs Whitbread Ale (Wyeast Labs #1099) Yeast-Ale

Mash Schedule: Single Infusion, Medium Body, No Mash Out

For All Grain Brewing: Bump Marris Otter Up to 10lbs (at my crappy efficiency, probably less for you), Bump 40L Crystal Malt to 1.5lbs, remove all extract.


This ones for the Mrs, I plan on a Sierra Nevada Celebration Ale Clone like thingy for myself for the holiday Season.

Today was a sad day for the Cloutier household.  I had to cut my hop bines back to the ground until next year.  I guess the summer is truly over, and not coming back.

Sounds like a great winter warmer recipe!

Here's the one I used:

Recipe Type: All Grain   
Yeast: S-04   
Yeast Starter: YES   
Batch Size (Gallons): 5.3   
Original Gravity: 1.061   
Final Gravity: 1.016   
IBU: 31.5   
Boiling Time (Minutes): 90   
Color: 17.3SRM   
Primary Fermentation (# of Days & Temp): 14   
Additional Fermentation: 60 Aging   
Secondary Fermentation (# of Days & Temp): 14   
 

10Lbs American 2-Row
8oz. Crystal 120L
8oz. Caravienne
4oz. Honey Malt
2oz. Black Roast Barley
2oz. Special B


1oz Glacier @ 60min.
1oz. Willamette @ 1min.

1 tsp Ginger @ 3 min.
1 tsp All-Spice @ 3 min.
2 tsp Cinnamon @ 3 min.

Whirflock @ 5 min.

Mash @ 155F for 60 min.
Ferment @ 66F for 14 days Safale S-04
Secondary @ 66F for 14 days
Keg @ 66@ for 60 days.

OG 1.061
FG ~1.016
ABV 5.8%
SRM 17.3
IBUs 31.5

 

Making a simple pale ale today....

The simple pale ale was brewed, and is almost ready to go into the secondary...I'm really pumping them out now.Big Grin

On Monday, I'll keg the winter warmer, and put the pale ale into it's secondary, where it will sit for another week, before I keg. Up next????

(Its about damn time, lol).
Speaking of brewing again, I finally got to it myself! I now have a nice little British Mild happily bubbling away in the basement. Cant wait to try it out.
