This was a really enjoyable brew to make.  In fact, here we are about 14 hours after I set the batch, and the activity is unbeliveable.  This is the first time I have put a batch in the glass carboy for primary, and I am loving all the activity, the krausen in beautiful, thick, and the beer below is dancing all over the place, it's really amazing. 

One thing that was frustrating, I forgot to get C-Brite sanitizer whan I was at the store, and didn't realize I was out here at home.  So, I used bleach, and just made a point to use a decently weak solution, and rinse out afterwards.

the set up.  NO, I don't use all the corn sugar in the batch, but just wanted to have enough to go around since I needed some in the batch, and some for priming this and the next batch.

I took some video of the activity, but it doesn't really come out very well, not a well lit area.

The foam is starting to get up there, I think I may need to actually put a hose on that puppy tonight, it's getting pretty active.

now these tasted REALLY good!  I'm not real keen on chewing the husks, but the grains themselves were extremely sweet, twas a pity to toss them out.

finally got the temp up to where it should be in that room, and almost a little too high.  Took a reading yesterday evening- 74 F.  this morning it was down to just under 71, so I put a towel in the dryer for a minute and wrapped it around the carboy, just to make things cozy.  the krausen is starting to settle today, after getting pretty high up there last night.   Definitely a pale ale, even the color in the carboy is very different.

I initially took a temp reading in the room I keep the bottles, carboy etc, and it had been down to 65 F, and I was a bit concerned w/ this, and kinda wondered if it was a OR the culprit in the uncarbonated beer scandels of recent.  After just a few days of having the temp a bit higher, I did notice some more carbonation in a Brown ale bottle I opened this morning (no, I didn't drink it, but one way or the other, I need to make room for this batch that's coming out).

so, hoping to bottle this on Sunday, as well as set the batch of the Strong Brown again.  I am somewhat disapointed that I am using a nuetral tasteing yeast on the Brown ale, but  ithink I will be happy with the outcome regardless. 

i am also realizing I didn't make sure there was 5 gallons of Wort when I set the batch for the Brown ale before, just had 2 gallons in the boil and 3 in the fermentor, didn't make up for anything that dissolved during the 60+minute boil, so I think that was a bit of a mistake a well.

Make sure you take notes on the things you do with each brew so you can look back to any mistakes you may have over looked. Wink
