I buy pellets, 11 lbs. at a time. I seal leftovers in a vacuum sealer and freeze.
If I had a nitrogen injector, I'd use that, too -- vacuum out the O2, dose with N2, reseal. Hops is one of those things that really needs to be purchased in quantity. If nothing else, form a co-op with the local brewclub, or buy one or two kinds of hops, and make nothing but beers that utilize those hops.
Hallertau Traditional/Mittlefrue, Czech Saaz, Cascade and Eastern Kent Goldings will take care of most of your brewing needs. Trade some EKG for Chinook when you want your beer to taste like PineSol.... :-)
