I have had one for 22 years when they were New Braunfels and there are many things you can do. You WILL have to learn it to controll the air damper for heat. It will take a while. I have a offse and a few of the UDS one too, I like the UDS for all night smoke sessions. Here is a pic if you are not familiar with them. Yes it is a "ugly drum smoker" They are very simple to build. I have 2 of them decked out and think I have around 60 bucks each in them. It sounds like you do need a larger basket and do a searh for the "menion method" it will help you get more time. I am glad the wings turned out great, I love buffalo chicken. My wife and I have a silly tradition we have buffalo chicken every Thursday and eat it while watching Survivor. - scott81425 - 10-22-2009 i try the minion method, but i either do something wrong, or it just doesn't work out so well for me. i don't know, i have a bigger bowl for the charcoal, i think i'll try that this weekend. thanks for the pointers. - tafdom - 10-22-2009 They were the origional smoker and does a bang up job. Like everything it takes practice. I'm sure there are a bunch of forums on them. The minnion works great when you dial it in. I pile my coal up and put 6 hot coals on the top of one end. They are supposed to ignite the others as they go sweeping the unlit coals to keep a lower temp. You will figure out over time how much to add for a longer burn. The best thing I can tell you from experience is DON'T use off brand coal.
