Jimmie...What do you first soak them in? And, do you cook or peel the peppers first before blending or just put them whole in the blender?

Jan, take the peppers and put a slice into them and let them sit in the 1 cup of water and one cup of vinegar (add more vinegar if needed) and 2 tsp of salt for 24 hrs prior to blending.
I then take a bunch at a time and pop them in the blender without peeling them etc.

Jimmie,
Do you use tomatoes, tomato paste, tomato sauce, or none of the above? And what were the peppers? I saw jalapenos, habenero, and cerrano. Couldn't identify the little red ones, or the bigger cirucular red ones. Also any garlic?
I've been making my own hotsauce for awhile, and I love seeing others recipe's.

If you can take the heat, I'll send you a bottle..
They dont call me Piri Piri Parkster down here in the jungle for nothing Mr Mum.
Nobody cooks the BBQ's at our staff house since I landed this post and started marinading and cooking, and when we were in Portugal last month, the steak house owner was shocked at me using his "volcano piri piri" like ketchup.
You have a lot to live up to.
