How long will a roast keep before cooking?
#1
I picked up a pork butt to smoke over the weekend.  We ended up running out of time and didnt get to cook it.  I coated it with my rub, and it is wrapped in plastic wrap in the fridge.  Is it going to hurt anything to save it for this coming weekend? Should I reapply the rub?  I would think the longer it sits the more flavor it will pick up, but I am new to this whole smoking thing.

You should be fine as far as freshness goes, but any longer and I would throw it in the freezer.  The problem you are going to have it that if you rub has salt in it, over the week it is going to leech all of the moisture out of the Butt.  If you can, I would say brine it for 24 hrs before throwing it on the smoker, that way you dont end up with cardboard when you pull it off the smoker.

Thanks Mark, I decided to sacrifice sleep in the name of BBQ.  I threw it on the smoker about an hour and a half ago.  Hopefully it turns out good
