So in an attempt to eat a little healthier, I'm going to be eating a lot of chicken breast for a while. So to try and keep the breasts moist with out wrapping in bacon every time, I whipped up a simple marinate of plain yogurt and Stubbs rub. Hopefully the yogurt will just cook off in the smoker leaving everything nice and juicy. Going to smoke for a couple hours with apple wood. Marinating below, more pics to follow.

Well they're off the smoker. They were very juicy all the way through, great flavor at he edges, but the middle of the breast needs more flavor. I'm thinking I should brine them first next time, or overnight marinate in the vacuum marinator. Yogurt really kept the juices in though!

Chorizo just came off after two hours of maple at an IT of 175* running the smoker at 220*

Next the beer can chicken brined for three hours in water, salt, brown sugar and apple cider vinager. Rubbed with evoo, Stubbs rub and garlic salt. Going to smoke for two hours with maple and then finish on the grille until breast IT hits 175*. Flying dog winter ale in the cup.

The smoker has been running a lot so far this summer. Jalapeno cream cheese stuffed loin a few nights ago. Ribs. Made my best pork butt yet about a week ago, damn dog ate about 5 pounds of it off the counter. I love smoking!
