i've made these a few times, and love them. but what's the best method to remove the seeds and membrane of the jalapeno? i always end up using my fingers, then they hurt for days. i read somewhere a melon baller would work. any other ideas?

I just made these for the first time last weekend and the were SO GOOD! 

I just wore rubber gloves when deseeding the peppers.

mm. that sounds good! i made these for thanksgiving. i don't know how, but i got put in charge of all the food not for dinner. so i made about 6 dozen of these. i found a tool at wal mart, similar to a melon baller, that gutted these things so quickly. they were so good!

Scott the melon baller I think is to big but there is a tool that looks like one that is smaller that will work perfectly. I usually just use a small spoon. Or leave them in.[cigar] More for me that way. [thumbsup]
