Not a great success. In retrospect adding the beer and small pieces of pineapple was not the best call because of the impact on the final texture. The scallops were right on, the veggies 70% there...

Back to the drawing board. Heading out to get another piece of chuck roast. I need to find the right balance between temp and cooking time.

Much better results w/o the beer and pinapple to impact the texture.

Pan seared - cooked at 128F / 24hrs - browned in broiler.

Not bad for a cheap cut of meat.
