OK so here is what I did...
Preheated the big green egg. Rubbed ribs with honey mustard and a dry rub. Wrapped ribs in foil. Put a tray under grill on top of coals and filled it with apple juice. Smoked with chunks of apple wood for 4 hours. Took ribs out of foil and kicked them around the propane grill while basting with BBQ sauce until they were crispy. Very tasty. |
