Not sure if I should do it from scratch or use corned beef.

Just put them on. It's cold & very windy so the smoker is running temps on the low side of the settings.

Saved 1 of them & made sandwiches of the other.
Sandwiches had Pastrami, melted Swiss cheese, sauerkraut, & Thousand Island dressing, all on lightly toasted rye bread.
